Ingredients
Method
Techniques
  • 4 whole sweet potatoes
Peel the sweet potatoes, cut them into uniform wedges and soak them in cold water for an hour, which is said to help them crisp in the air fryer.
  • 1 whole onion
  • scallions
  • 2–4 cloves garlic cloves
  • fresh parsley
Pulse the onion in the food processor in two to three batches until finely chopped and put it in a bowl with the grated garlic and the pulsed parsley.
  • 2 lb boneless skinless chicken thighs
Grind the chicken thighs in the food processor a few pieces at a time, pulsing until it resembles ground meat, and add it to the bowl.
  • ¾ cup panko breadcrumbs
  • 1½ tsp salt
  • freshly cracked black pepper
  • 2 tbsp Greek yogurt
  • 2 tsp dried thyme
  • 1 whole egg
  • feta cheese
Add the panko, salt, black pepper, Greek yogurt, dried thyme and the egg and mix well until it comes together.
  • sun-dried tomatoes
Divide into eight big portions, or 12 medium, shape into patties, set them on parchment lined trays and chill 30 minutes in the fridge or freezer so they hold together.
  • Greek yogurt
  • 2 cloves garlic cloves
  • mayo
  • 1–2 tbsp white vinegar
  • fresh dill
  • baby lettuce leaves
  • tomato
  • red onion
  • pickles
Mix Greek yogurt with grated garlic, mayo, white vinegar, black pepper and finely chopped dill for the sauce, and set it aside.
Yogurt dill sauce and toppings
  • olive oil
  • garlic powder
  • 1 tsp cumin
Drain and dry the sweet potatoes, toss with olive oil, salt, black pepper, garlic powder and cumin.
Air-frying the sweet potatoes
  • dried oregano
Air fry at 400F in one even layer per batch for about 15 minutes, until crisp at the edges and cooked through, tossing each batch with crushed dried oregano and crumbled feta while hot.
Heat a cast iron skillet over medium heat with a little olive oil and cook the patties six to eight minutes per side for thick ones, four to five for smaller, until golden and 165F inside.
  • Muenster cheese
Top with feta and Muenster cheese for the last minute or minute and a half so they melt.
  • buns
Warm the buns in the same pan, spread dill sauce on the bottom bun, stack lettuce, tomato and onion, add the burger, more sauce on the top bun and pickles.
