Ingredients
Method
Techniques
  • 2 lb boneless skinless chicken thighs
Cut the thighs in half lengthways, turn 90 degrees and cut the strips into six pieces no larger than one inch.
  • 125 g olive oil
  • 15 g salt
  • 30 g minced garlic
  • 5 g oregano
  • 5 g black pepper
  • 100 g Dijon mustard
  • 2 whole lemon zest
  • 30 g lemon juice
Toss the cubed thigh in a bowl with olive oil, salt, minced garlic, oregano, black pepper, Dijon, lemon zest and lemon juice.
Marinate in the fridge, as little as 30 minutes and up to 24 hours.
  • 350 g all-purpose flour
  • 7 g instant yeast
  • 5 g salt
  • 8 g sugar
  • 15 g olive oil
Pulse flour, instant yeast, salt, sugar and olive oil in a food processor about five times.
  • 210 g beer
Warm the beer to about 86 to 90F and stream it in with the processor running.
Turn the dough onto a lightly floured surface and knead two minutes, alternating a push with the palm and a squeeze.
Divide into four pieces of about 150 grams and pre-shape each into a ball.
Cover with a damp paper towel and rest 15 minutes.
  • 1 whole cucumber
Grate the cucumber on the largest holes of a box grater, or chop it to a pulp.
Bundle the grated cucumber in layered paper towel and squeeze out the water.
  • 200 g plain Greek yogurt
  • 75 g mayo
  • 1 cloves garlic clove
  • 5 g salt
  • 5 g chopped fresh dill
  • 15–20 g lemon juice
Stir the drained cucumber with Greek yogurt, mayo, minced garlic, salt, dill and lemon juice until homogeneous.
  • 2 whole tomatoes
  • ½ whole red onion
  • 20 g parsley
Dice the tomatoes and red onion small, add the chopped parsley and mix; no salt, it would draw water out.
Flour the board and roll each dough out to about eight inches across and a quarter inch thick, flipping or turning it if it sticks.
Rolling out the pitas
Thread 10 to 12 pieces of marinated chicken onto each soaked skewer, six skewers in total.
  • pan spray
Heat the grill to 550F and spray the grates liberally.
Grill the skewers on the far side; cook each pita about two minutes per side, four minutes in total.
Char the chicken on every side, 15 to 20 minutes in total.
Pull the chicken off the skewers and chop the one inch chunks down to roughly half inch.
Assembling the wrap and tasting
  • pepperoncinis
Pile about eight ounces of chicken on a warmed pita, top with three spoonfuls of the cucumber sauce, two drops of the tomato onion relish and sliced pepperoncini.
Wrap in foil paper or parchment and rip open the end to serve.
