Techniques
- 460 g all-purpose flour
- 2 tsp baking powder
Whisk the flour, baking powder, ground cinnamon and salt together and set aside.
- 2 tsp ground cinnamon
- ¼ tsp salt
- 250 ml light olive oil
- 60 ml orange juice
- 130 g granulated sugar
In a second bowl whisk the olive oil, orange juice, sugar, eggs and vanilla extract until combined and smooth.
- 3 whole eggs
- 1 tsp pure vanilla extract
Add the dry ingredients a little at a time, whisking just until it comes together.
- 1 cup ground walnuts
Grind the walnuts in a food processor and mix them in by hand or with a spatula.
If the dough is wet and sticky, add a little flour at a time, but not enough to dry it out and make it dense; it should stay tacky.
- ½ cup flour
Rest the dough in the bowl 15 minutes to set and firm up before adding any more flour.
Turn out onto a lightly floured surface, roll to coat, and cut into two equal portions.
Roll each portion into a log about 12 inches long and half to one inch thick and set them apart on a parchment-lined baking tray, since they spread.
- sesame seeds
- ¼–½ cup sesame seeds
Sprinkle sesame seeds on top if you like, or work a quarter to half a cup into the dough with the walnuts.
Bake at 350 Fahrenheit for 30 minutes until firm, then rest until cool enough to handle.
Cut the logs into slices as thick or thin as you like and bake again at 350 Fahrenheit for another 15 to 20 minutes, alternating the trays so they bake evenly.
- ¼ tsp cloves
Cool before serving. Variation: hazelnuts or pecans in place of the walnuts.
