Techniques
  • 900 g chopped green beans
  • salt
Drop the chopped green beans into a pot of well-salted boiling water and cook about four to five minutes until quite tender.
Move the cooked beans to a bowl; lean towards slightly more cooked rather than less so the fibre softens.
  • 1 stick butter
  • 450 g chopped mushrooms
Melt one stick of butter and add the chopped mushrooms.
  • 15 g minced garlic
  • 10 g salt
Add the minced garlic and the salt, stir to combine and sweat the mushrooms in the butter about five to six minutes until they have cooked off all their water.
  • 5 g chopped fresh thyme
Once the mushrooms are golden and frying in the butter rather than steaming, stir in the chopped thyme and fry it off for a second.
Stir in the flour and cook off the raw flavour about 90 seconds.
  • 65 g all purpose flour
  • 400 g chicken stock
  • 125 g heavy cream
Pour in the chicken stock and the heavy cream, stir to combine and bring up to a simmer; about three to four minutes to thicken.
  • 50 g grated Parmesan
  • 3 g black pepper
Add the beans, the grated Parmesan and the black pepper and stir to combine.
If the sauce looks very thick, add a little more stock.
Spread evenly in a metal nine by 13 pan.
  • crispy fried onions
Top with crispy fried onions or fried shallots.
Bake at 375F for 18 to 20 minutes.
