  • 2½ lb chicken drumsticks
Skin the drumsticks.
On a cutting board, score each drumstick four times per side, down to the bone, eight slits in total.
  • salt
Salt both sides generously and leave the salt on the meat while the marinade is made.
  • 225 g plain Greek yogurt
  • 75 g oil
  • 8 g salt
  • 5 g turmeric
  • 15 g garam masala
  • 3 g cayenne
  • 25 g smoked paprika
  • 45 g garlic cloves
  • 30 g ginger
  • 75 g lime juice
  • 10 drips red food color
Stir the yogurt, oil, salt, turmeric, garam masala, cayenne, smoked paprika, garlic, ginger, lime juice and food color together until there are no lumps.
Coat the drumsticks in the marinade, into every crack.
Marinate in the fridge 30 minutes to 24 hours; longer is better.
Brush the grill grates heavily with an oil soaked paper towel and hit them with pan spray.
Oiling the grill grates
Grill the drumsticks over high heat 6 to 8 minutes on the first side, then lid down and heat to medium.
Flip and cook over a medium flame 12 to 15 more minutes until fully cooked.
  • ghee
Brush with melted ghee or butter off the grill.
