Techniques
- 400 g asparagus beans
Discard the stem tops of the long beans and dice into third-of-an-inch pieces.
- 6 whole Thai style bird eye chilies
- 5–6 cloves garlic
Dice the bird's eye chilies; crush, peel and finely dice the garlic; finely dice the sliced ginger.
- 5–6 slices ginger
- cooking oil
Heat the wok, add a drizzle of oil, and stir-fry the long beans, chilies, garlic and ginger on medium heat a few minutes until fragrant.
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
Add the soy sauce, oyster sauce and fish sauce early so the beans absorb the flavor; stir until the beans are cooked through and no longer taste beany.
- 250 g ground pork
Push the beans aside, add the ground pork, turn the heat to high and break it up with a spatula until loose and no longer pink; mix everything together.
- salt
- 1 tsp dark soy sauce
Taste, add a dash of salt and the dark soy sauce, toss and serve, with white rice or on congee or noodle soup.
