  • garlic
Put garlic in its skin and jalapenos in a skillet over about medium heat for 10 to 15 minutes, until the garlic is soft.
  • jalapeno chilies
Peel the garlic into a food processor, add the jalapenos with their stems removed, and puree.
  • fresh squeezed lime juice
Add fresh lime juice and season highly with salt to make the marinade.
  • salt
Smear about two-thirds of the green chili garlic paste all over the fish and flip; put the rest in a bowl for the salsa.
  • heirloom tomatoes
  • chopped red onion
Cut the heirloom tomatoes into small dice and add to the marinade with chopped red onion rinsed under cold water.
  • lemon balm
Cut lemon balm into a thin chiffonade and add to the salsa.
Lay a banana leaf (or foil) on a baking sheet, put some of the herb on it and set the marinated halibut on top.
  • halibut steaks
Bake in a very hot oven, about 450 degrees, so it browns outside and stays juicy inside.
  • mashed potatoes
  • nasturtium flower
Plate the fish with a big dollop of mashed potatoes and the heirloom tomato salsa, and top with a nasturtium flower.
