Techniques
  • 2½ lb potatoes
Peel the potatoes.
  • cold water
Grate on the biggest holes of the grater straight into cold water.
In a big bowl, wash off the starch; drain through a sieve and rinse several times.
Squeeze out the water through cheesecloth set in a sieve, in batches, to the last drop.
  • 1½ tsp salt
Rub in 1.5 tsp salt and let sit 5 minutes.
Squeeze the potato a second time to remove the water the salt has drawn out.
  • black pepper
Mix in black pepper (shallot or herbs optional).
Pepper and optional additions
Heat the biggest frying pan, add the potato in one batch, pack it down and shape it with a spoon.
Cooking covered, then uncovered
Cover and cook 12 minutes on medium-low heat until the side is slightly golden.
Flip, pack tight and cook the other side 12 minutes uncovered so it stays crunchy, until golden brown.
