Ingredients
Method
Techniques
- oil
- diced onions
Toss diced onions in oil in a very hot pan and cook; after five to seven minutes stir in a little butter, and keep cooking about half an hour until caramelized. Season with salt and pepper.
- bacon
- butter
Cut bacon strips slightly longer than half and crimp them into the valleys of a rack to make them wavy; bake in the oven about 25 minutes until crispy.
Making wavy bacon
- Japanese mayo
- ketchup
- mustard
- Worcestershire
- steak sauce
For the stacker sauce, mix Japanese mayo with a little ketchup, mustard, Worcestershire and steak sauce.
Stacker sauce
- 3 oz ground beef
Weigh 3 oz of ground beef per patty, roll into balls, and smash each between parchment as wide and round as possible, since it shrinks. Make six.
- buns
Cut the bun tops flat with an offset bread knife so they look like the Whopper Melt's.
Cutting flat bun tops
- BFF seasoning
Season one side of each patty with the salt, pepper and garlic seasoning.
- salt
- pepper
Toast the buns in oil on the flat top, both sides of the tops and the cut side of the bottoms.
- spray
Put the patties on a very hot grill, spray, and cook about 45 seconds altogether, flipping, for char marks.
Classic: two patties with cheese, caramelized onions, stacker sauce and a lid.
Building the classic, bacon and spicy melts
- jalapenos
- sriracha
Variation: the spicy melt adds jalapenos and the sauce mixed with sriracha, drizzled on.
