Techniques
  • 450 g cod fillets
Pat the cod fillets completely dry on paper towels.
Homemade fish sticks instead of store-bought
  • sea salt
  • freshly cracked black pepper
Season the fillets with sea salt and freshly cracked black pepper on both sides.
Cut each fillet into sticks 3 and a half inches long by three quarters of an inch thick, about 8 cm by 2 cm.
  • 30 g all-purpose flour
Toss the pieces gently in the flour in a large bowl until each is evenly coated.
  • 1 whole egg
  • 15 ml water
Whisk the egg with the water, sea salt and black pepper in a second bowl.
  • 120 g plain bread crumbs
  • 3 g garlic powder
Mix the bread crumbs with the garlic powder, onion powder and smoked paprika in a third bowl.
  • 2½ g onion powder
  • 1¼ g sweet smoked Spanish paprika
  • 120 ml sunflower oil
Heat the sunflower oil in a large fry pan over medium heat.
To bake instead: 200C, 400F, for about 15 to 20 minutes, flipping at the halfway point.
Coat each floured stick in the egg wash, then in the seasoned bread crumbs, fully covered all around.
Fry in a single layer, evenly spaced, in batches so the pan is not crowded, about three minutes per side until golden and crispy and just cooked through.
Transfer each batch to a wire rack with paper towels underneath.
  • 120 g plain Greek yogurt
  • 5 g Dijon mustard
  • 20 g finely chopped onion
  • 35 g chopped dill pickles
  • 10 ml fresh lemon juice
  • sea salt
  • freshly cracked black pepper
Whisk the Greek yogurt with the Dijon mustard, chopped onion, chopped dill pickles, lemon juice, sea salt and black pepper.
Put the tartar sauce in a serving dish and arrange the fish sticks around it.
