Techniques
  • 3 whole broccolini
Chop the broccolini into small bite-sized pieces and put in a jar.
  • red bell pepper
  • 2 whole cremini mushrooms
  • ¼ whole tomato
  • 1 stick green onion
Thinly slice the red bell pepper and mushrooms, dice the tomato and finely chop the green onion; add to the jar.
  • ¼ cup edamame
  • ¼ cup corn
  • wakame seaweed
Add the edamame and corn, the wakame broken into small pieces, and the mung bean noodles.
Edamame, corn and wakame
  • 50 g mung bean noodles
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp sesame seeds
  • 2 tbsp miso paste
  • 1½ tbsp soy sauce
  • toasted sesame oil
Add the onion powder, garlic powder, sesame seeds, miso paste, soy sauce and a splash of toasted sesame oil. Close the jar and refrigerate until ready to eat.
Mung bean noodles and seasonings
  • 2½ cup boiling hot water
Do not pour hot water into the cold jar, which risks cracking it and cools the water: transfer the noodles and vegetables to a serving bowl.
Why not pour water into the jar
Pour in the boiling water, stir with chopsticks to dissolve the miso, and cover the bowl for 8 to 10 minutes.
