Techniques
- warm water
- yeast
- sugar
Whisk warm water, yeast and a little sugar in the stand mixer bowl; cover and leave 5 to 10 minutes until foamy.
- olive oil
- salt
- all-purpose flour
Add olive oil, salt and all-purpose flour and mix with the dough hook on low about two minutes; add flour a teaspoon at a time if it sticks to the bowl.
Mixing in oil, salt and flour
Knead about five minutes in the mixer or by hand on a lightly floured surface until soft and stretchy and it springs back when poked.
- olive oil
Turn in a lightly oiled bowl, cover and rise until doubled, 60 to 90 minutes.
Punch the dough down, divide in half on a floured surface (freeze one half if wanted) and shape into a disc.
Stretch the dough gently to the edges of the pan, pressing out an edge; if it resists, cover and rest 5 to 10 minutes. One half makes a 12-inch pizza.
- olive oil
- fresh garlic
- ½ cup sauce
- 2 cup shredded mozzarella
Dimple the dough to prevent air bubbles, brush with olive oil including the edges, add a little fresh garlic, then spread the sauce to the edges and cover with the cheese.
