  • 1 cup raisins
  • 1 cup milk
  • 1½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ¼ cup brown sugar
  • 5 tbsp melted butter
  • apple juice
Pour boiled apple juice over the raisins and set aside to plump.
  • 1 tsp white sugar
  • 1 tbsp yeast
Stir 1 teaspoon sugar and 1 tablespoon yeast into the milk until dissolved; leave about 5 minutes to proof.
  • 3½ cup bread flour
Whisk the bread flour with the cinnamon, nutmeg, salt and packed brown sugar.
  • 1 whole egg
  • 1 whole orange zest
  • ¼ cup bread flour
Add the egg and melted butter to the proofed yeast and mix thoroughly. Zest the orange.
Egg, butter and orange zest
In a food processor, combine the flour mixture, yeast mixture and orange zest; pulse about 4 to 5 minutes, resting the machine in between (8 to 10 minutes in a stand mixer). Add a little of the reserved flour if very sticky; the dough stays soft.
Mixing in a food processor
  • oil
Drain the raisins and work them into the dough with lightly oiled hands, a minute or two.
Cover and let rise about one hour, until doubled.
  • butter
  • flour
Brush the pan with room-temperature butter and dust with flour.
Punch the dough down, turn onto a lightly floured surface and divide into 12 equal parts. Roll each into a tight ball and place in the pan.
Cover with a damp kitchen towel and let rise 30 minutes.
  • ½ cup flour
  • 5 tbsp water
Mix half a cup of flour with 5 tablespoons water into a thick paste, thinning with water if needed. Put it in a zip-top bag and snip the tip.
Pipe straight lines across the buns in one direction, then the other, to make crosses.
Bake in an oven preheated to 350F for about 20 minutes.
  • ¼ cup water
  • ¼ cup sugar
Warm a quarter cup each of water and sugar and stir until dissolved.
Brush the hot buns with the sugar syrup for shine and sweetness.
