  • salt
  • 1 can black beans
Add a little salt to fresh masa. Drain some liquid from a can of black beans and puree them smooth in the food processor.
  • water
Knead in a little water carefully, with a wet hand, to a soft dough matching the bean puree's texture.
Take a piece a little bigger than a golf ball, make a well, put in a little bean puree and close the masa around it; roll gently into a 5 inch cigar.
Press gently between plastic in a tortilla press, turn and press the other side into a sandal shape; peel off the plastic.
Cook on a griddle over medium heat about 2 minutes until set and starting to brown, then 2 to 3 minutes on the other side.
  • oil
To serve, rewarm drizzled with a little oil and top with chorizo and salsa.
