  • 60 ml extra virgin olive oil
  • 1 whole large onion
Heat a large fry pan over low-medium heat with the olive oil. Roughly chop the onion and garlic.
  • 4 cloves garlic
Add the onion and garlic and stir to coat, stirring every 1 to 2 minutes, until lightly sauteed and translucent, 5 to 6 minutes.
  • 1 whole red bell pepper
  • 1 whole green bell pepper
  • 1 whole small zucchini
  • 4 whole tomatoes
Cut the bell peppers and zucchini into small bite-size cubes and finely grate the tomatoes.
Add the bell peppers and saute about 5 minutes, stirring every 1 to 2 minutes.
  • 60 ml white wine
Add the zucchini and cook 3 to 4 minutes until lightly translucent.
Add the white wine and simmer 2 to 3 minutes until the alcohol cooks off.
  • sea salt
  • freshly cracked black pepper
  • 2 sprigs fresh mint
Add the grated tomato, season with sea salt and black pepper, add the mint sprigs and simmer about 10 minutes.
  • 60 ml extra virgin olive oil
  • 4 whole eggs
Heat the olive oil in a small fry pan over medium heat and crack each egg into its own bowl.
Fry each egg about one minute without moving it until lightly crisp underneath, splash hot oil over it for a few seconds only, and remove; season with sea salt and black pepper.
  • fresh parsley
Take the vegetables off the heat, spoon into a serving dish and top with a fried egg and fresh parsley.
