  • all purpose flour
  • whole wheat flour
  • granulated sugar
  • baking powder
  • baking soda
  • salt
  • ¼ stick cold butter
  • oats
Cut about a quarter stick of cold butter into small cubes.
Cutting cold butter into the dry mix
Mix the dry ingredients (all-purpose and whole wheat flour, sugar, baking powder, baking soda, salt) in a bowl and add the cold butter.
Preheat the oven to 375F and line a cast iron skillet with parchment.
Cut the butter into the dry mixture with a pastry cutter, then check with the hands for any missed pieces.
  • buttermilk
  • ¼ cup unsulfured molasses
Stir about a quarter cup of molasses into the buttermilk and add it to the dry ingredients.
Molasses buttermilk and mixing the dough
Work it together with a spatula, then by hand, until it feels a little tacky but not wet.
Set it in the skillet, flatten it a bit and cut a deep cross.
Brush the top with a little more buttermilk and sprinkle with oats.
Bake at 375F for 45 minutes or so, until deep golden brown and hollow-sounding when tapped; cool a bit.
