Techniques
Preheat the oven to 425 and have a cast iron skillet or baking sheet ready.
Oven and pan
  • 480 g all-purpose flour
  • 1½ tsp baking soda
  • 1 tsp kosher salt
In a large bowl whisk the flour, baking soda, kosher salt and sugar.
  • 4 tbsp granulated sugar
  • 1 whole egg
  • 1⅔ cup cold buttermilk
Whisk the egg with the cold buttermilk.
  • cold butter
Grate or cut the cold butter into the flour and work it in by hand or with a pastry cutter, leaving larger chunks.
Working in the cold butter
Make a well, pour in the buttermilk mixture and fold with a spatula until just combined; do not overmix.
  • raisins
Fold in the raisins.
  • flour
On a lightly floured counter, bring the wet dough together into a loaf without kneading, dusting the outside with flour.
Put the loaf in the cast iron pan and cut a cross on top with a floured knife.
Bake at 425 for 25 to 30 minutes until puffed and golden; cool a little before slicing.
