Ingredients
Method
Techniques
  • 6 tbsp brown sugar
  • 6 tbsp pickled jalapeno juice
  • 6 tbsp low sodium soy sauce
  • 1–3 whole jalapenos
  • ½ whole onion
  • 4 cloves minced garlic
  • 2 lb chicken
  • 2 tsp salt
  • 1 tsp black pepper
Pat the cubed chicken dry and season with the salt and black pepper.
  • 5 tbsp cornstarch
Coat the chicken fully with 5 tablespoons of cornstarch and set aside.
  • 1 whole pickled jalapeno
  • 1 tbsp cornstarch
For the sauce, mix the brown sugar, pickled jalapeno and its juice, and low sodium soy sauce until the sugar dissolves; mix in 1 tablespoon of cornstarch until dissolved.
Mixing the sauce
  • oil
Heat a wok over medium-high with the bottom covered in oil; fry the chicken in batches about five minutes, until golden all around.
Remove the chicken, draining as much oil as possible, and repeat with the rest.
Reduce the heat to medium-low, remove most of the oil, and saute the jalapenos and onion a couple of minutes.
Add the minced garlic for about 30 seconds.
Stir the sauce mixture and pour it in; bring to a simmer, a couple of minutes, scraping the bottom of the pan, until it thickens.
Add the chicken, mix it in, and reduce the heat to the lowest setting.
