Add the water a little at a time until a dough forms; do not over-process or it becomes too stretchy.
Knead in a bowl 30 seconds to one minute; bag it and rest in the fridge about 20 minutes.
Whisk one egg with about 2 tablespoons of water for the egg wash.
- 1 whole egg
- 2 tbsp water
Working with half the dough at a time, the rest kept cold, roll it out very thin and cut rounds with a pie cutter.
Fill each round with about two tablespoons of filling; wet the edges with a fingertip of water, fold over, and crimp with a fork.
