Ingredients
Method
Techniques
  • 1 dozen scotch bonnet peppers
Pulse the scotch bonnets in a food processor a few times to roughly chop.
  • 1 head peeled garlic cloves
  • ¼ cup fresh thyme
  • ⅓ cup packed brown sugar
  • 3 tbsp soy sauce
  • 1½ tbsp kosher salt
Add the garlic, thyme, brown sugar, soy sauce and kosher salt and pulse a few times more.
  • 2 tbsp black peppercorns
  • ⅓ cup whole allspice berries
Grind the peppercorns and allspice berries to a fine powder in a mortar and pestle or a spice grinder.
  • 9 whole scallions
Add the ground spices and the chopped scallions and blitz in long pulses to a smooth paste, scraping down the sides.
Taste for seasoning; if a tiny spoonful is not painful, add habaneros.
