Techniques
- 6 oz ground beef
- cold water
Weigh two 3-ounce portions of ground beef onto plastic wrap and press each into a patty about a quarter inch thick with damp fingers.
Portioning and pressing the patties
- Worcestershire sauce
- garlic powder
- freshly ground black pepper
- kosher salt
- cayenne
Season the surface without working it in: a few drops of Worcestershire spread around, then garlic powder, black pepper, kosher salt and a pinch of cayenne.
- 1 slices cheddar
Cut a round of cheddar and press it lightly into the center of one patty.
Cheese and sealing the edge
Flip one patty over the other and press and smear around the edge to seal; flip and seal again from the other side.
Cook in a preheated cast iron skillet over medium-high about 4 minutes per side for close to medium-rare, or about 5 minutes per side for closer to medium.
