Ingredients
Method
Techniques
  • ½ whole kabocha squash
  • hondashi
  • sake
  • soy sauce
  • sugar
Scoop the seeds out of the kabocha; the skin stays on and cooks with it.
Cut into relatively thin slices so it cooks fast.
  • water
Simmer the slices in the dashi, sake, soy sauce and sugar broth.
Taste the broth knowing it will reduce: sweetness and saltiness concentrate as it does, so they should not be overbearing now.
Simmer until soft, not al dente.
