Techniques
- 35 g ginger
- 45 g garlic
- 1 tsp fennel seeds
- 1½ inch cinnamon stick
- 10 whole cloves
- 10 whole green cardamoms
- 1 tbsp oil
- 400 g onions
- 1½ kg boneless skinless chicken thighs
- ½ cup plain unflavored yogurt
- 1 tbsp Kashmiri red chilli powder
- 1 tsp turmeric powder
- 2–3 tsp salt
- ¼ tsp ground mace
- ¼ tsp ground nutmeg
- 1 whole tomato
Puree tomato, ginger and garlic in a blender into a fine smooth paste.
- black peppercorns
Dry roast fennel seeds, cinnamon stick, cloves, green cardamoms and black peppercorns on very low heat a few minutes until fragrant; take off the heat.
Grind with a mortar and pestle (cardamom skins removed) or a spice grinder.
- 2 tbsp ghee
- 1 whole dried bay leaf
Heat oil and ghee over medium; add the bay leaf, then finely chopped onions; stir on low heat until golden, not too brown, until oil shows at the sides.
Frying the onions
Add the tomato ginger garlic paste; stir on high heat two minutes; add the chicken and stir from time to time on high heat.
Adding the paste and chicken
- ground coriander
- ground cumin
- 2 tbsp water
Mix the yogurt with Kashmiri chilli powder, ground coriander, cumin, turmeric and about two tablespoons of water, stirring vigorously.
Spicing the yogurt
When oil is released at the edges, turn the heat to lowest (or off on electric), add four tablespoons of cold water, add the yogurt and stir immediately.
Keeping the yogurt from separating
- 4 tbsp cold tap water
Raise to medium and stir continuously until it comes to a boil; this keeps the yogurt from separating.
- sugar
- 1 cup milk
- ½ cup water
Add a cup of milk and half a cup of water; partially cover and cook on very low heat 20 minutes, stirring so nothing catches.
- ¼ tsp kasuri methi
Add the ground spice powder, ground mace, ground nutmeg and a quarter teaspoon of kasuri methi; cover five more minutes on very low heat.
