  • 1 cup beer
Pour the beer into a bowl and whisk it until there are no bubbles left and it is flat and stale; do this step ahead.
  • 1 lb extra sharp cheddar
Grate the extra sharp cheddar straight into the bowl of a food processor.
  • 2 cloves garlic
  • dry mustard
  • freshly ground black pepper
  • cayenne pepper
  • salt
  • Louisiana hot sauce
  • Worcestershire sauce
Add the crushed garlic, dry mustard, black pepper, a whole lot of cayenne, a pinch of salt, a few dashes of Louisiana hot sauce, a few drops of Worcestershire and about a cup of the stale beer, varying the beer for the texture you want.
Pulse to start, scrape down with a spatula and keep processing a couple of minutes until very smooth and creamy, then taste and adjust the salt, pepper and heat.
  • celery
  • carrots
Refrigerate overnight to let the flavours develop, though it can be served right away, in a bowl with extra cayenne, celery and carrots.
