Techniques
  • 1 lb unsalted butter
Soften the butter at room temperature an hour or two, or briefly in the microwave without melting.
  • 350 g granulated sugar
  • 2 tsp pure vanilla extract
Beat the butter, sugar and vanilla with the paddle three to five minutes, low then high, until fluffy and pale.
  • 4 whole eggs
  • 2 whole egg yolks
Bring the eggs to room temperature (warm water, changed several times, if needed); combine four eggs and two yolks in a bowl.
Room-temperature eggs
  • 1150 g all-purpose flour
  • 1½ tsp baking powder
  • 2 whole large oranges
Zest the oranges into the flour and baking powder, add the salt and whisk together.
  • ½ tsp salt
  • ½ cup heavy whipping cream
Beat in the eggs one at a time, then the cream.
Building the dough
On low speed add the flour a cup at a time until a dough forms; turn out onto a clean surface. No extra flour needed.
Take walnut-sized pieces, roll into ropes about eight inches long, fold in half and twist; or shape circles or S shapes.
Arrange on parchment-lined half-sheet trays.
  • 2 whole egg yolks
Whisk two egg yolks with some whole milk and brush each cookie.
  • whole milk
Bake at 350F about 35 minutes until golden all round, switching racks halfway; 325F for crispier, longer.
Cool completely at room temperature; they harden as they cool.
