Ingredients
Method
Techniques
  • ½ cup butter
  • 2 whole large eggs
With everything at room temperature, break up two large eggs.
Eggs, sugar and milk
  • 1 cup sugar
Add a cup of sugar and let it hydrate a little; break up the eggs more.
  • 1 cup milk
  • flour
Add a cup of milk, then the flour, then the melted and cooled butter; whisk to a silky, pourable but thick batter like a loose pancake batter.
Rest the batter so the flour hydrates and any lumps disappear.
  • cocoa
  • salt
Divide the batter: whisk cocoa and a little salt into one portion, thinning with a little milk if it thickens.
Cocoa and vanilla versions
  • homemade vanilla
Add vanilla to another portion.
How flavours change in frozen ice cream
  • ¼ tsp cardamom
  • orange zest
Add about a quarter teaspoon of cardamom and a little orange zest to a third portion.
  • fresh ginger
  • five spice
Add peeled grated fresh ginger and a little five spice to a fourth portion.
  • vegetable oil
Heat the clamped iron on the stove over medium-low to medium, rotating it to heat both sides; oil an unused iron lightly.
Heating the iron
Spoon in a heavy spoonful of batter, close the iron, and cook, turning, until pale golden; the first one or two are tests.

Lift off and roll while warm, or leave flat for ice cream sandwiches.
