Techniques
  • 4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 tsp baking powder
  • ½ tsp baking soda
Combine flour, cinnamon, cloves, baking powder and baking soda; zest in about two teaspoons of orange zest, whisk and set aside.
  • 2 tsp orange zest
  • ¾ cup freshly squeezed orange juice
Juice the clementines to three quarters of a cup and strain into the mixer bowl to catch the pulp.
  • 1½ cup very light olive oil
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
Add the light olive oil, sugar and vanilla; whisk with a whisk, since the paddle does not reach the bottom of the bowl.

  • ¾ cup walnuts
Finely chop the walnuts in a food processor.
Add the flour mixture a little at a time until incorporated, then the rest with the walnuts; mix just until combined so the oil does not separate out.
Bringing the dough together
  • ½ cup flour
If the dough looks very wet, mix in half a cup of flour; it should stay a little wet and oily, not dry, or the cookies will be hard.
  • flour
Turn out onto a lightly floured surface, form walnut-size balls and roll them into logs, squeezing back together any that crack.
Place on parchment-lined baking trays with space between them.
Bake in a preheated 350 oven until golden brown, checking from 15 minutes; 15 to 25 minutes depending on thickness.
Cool completely, about 15 minutes; store at room temperature up to two weeks. Do not freeze.
