Techniques
  • 1⅔ cup all-purpose flour
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • ¼ tsp kosher salt
Sift the flour, baking soda, baking powder, sugar and kosher salt into a large bowl and whisk together.
  • 1 cup milk
  • tea
  • lavender
Add the tea and lavender to the simmering milk, stir, and simmer about 10 minutes; strain into a small bowl and set aside.
  • 3 whole egg whites
  • ½ cup sour cream
  • 3 tsp vanilla extract
  • ¾ cup unsalted butter
Whisk the egg whites, sour cream and vanilla; add the room-temperature butter.
Pour the lavender milk tea into the wet ingredients, then mix in the dry ingredients.
  • butter
  • 2 tbsp flour
Butter the pans, flour them with a couple tablespoons of flour and tap out the excess; divide the batter among three pans.
Wrap wet baking strips around the pans for an even bake with flat tops and no burnt edges.
Bake at 340F about half an hour, until the centers are set and the edges pull away from the pan.
  • 1 lb unsalted butter
Buttercream: beat the butter with the paddle on low about 5 minutes until creamy and silky.
Simple vanilla buttercream
  • 2 lb confectioner sugar
Sift in the confectioner sugar in two batches; add a healthy pinch of salt.
  • salt
  • lavender tea mixture
  • organic lavender essential oil
Flavor part of the buttercream with a few tablespoons of the lavender tea and two drops of lavender essential oil, and dye it with food coloring, folding with a spatula so it doesn't get too aerated.
  • blue pink food coloring
  • Italian meringue buttercream
  • gel food coloring
Fill two piping bags with lavender and white buttercream and set both in a third bag fitted with an 808 tip; pipe a spiral onto each cake layer as it is stacked.
Crumb coat with a paper-thin layer of buttercream and chill about 10 minutes.
Stacking, crumb coat and gradient
Apply Italian meringue buttercream in a pink-to-green gradient; smooth the top with an offset spatula and the sides with a bench scraper.
Pipe roses with a 127 tip on a piping nail, a green circle on top for the wreath, the flowers onto it, and leaves with a 349 tip.
