- salt
- sugar
- pandan leaves
Add agar powder to cold coconut water and stir, then add an equal amount of coconut milk, a little salt, some sugar and a piece of pandan leaf.
The coconut milk layer
Bring to a full boil, stirring frequently so the agar does not settle and gel on the bottom; a full boil shows it has dissolved. Keep hot.

- sugar
For the second layer, stir agar powder into coconut water, add less sugar and pandan leaf, and bring to a boil, stirring.
Divide the coconut milk mixture into three; pour one part gently into the mould, spooning off any bubbles, and refrigerate about five minutes until the surface can be touched without being liquid but is still warm.
Pouring the first layer
Measure one cup of the steaming-hot coconut water mixture (kept on a low flame) and pour it gently over a spoon onto a corner; let it set about seven minutes. Keep alternating layers while everything is still warm so they fuse.
Pouring over a spoon onto the corner
Chill until cold. Loosen the sides with a thin flat metal spatula, turn it out, trim the edges and cut into cubes.
