Rub lemon zest into the sugar with the fingers to release the oils.

Add neutral oil and a few eggs and whisk very well until lighter and pale.

Add whole Greek yogurt and the juice of one lemon; whisk to combine.
Yogurt, lemon and the dry mix
- 1 whole lemon juice
- instant lemon pudding
- vanilla powder
- milk
Add the pre-measured dry ingredients, instant lemon pudding, vanilla powder and a splash of milk; whisk until well combined.
Pour into a greased 9 by 5 inch loaf pan lined with parchment and bake at 350 for around an hour, until fully baked.
