Ingredients
Method
Techniques
- ¼ cup parsley
- 1 lb ground beef
- ¼ cup bread crumbs
- 2 tbsp olive oil
- 1¼ cup chicken stock
- fresh thyme
- 1 cloves garlic
Finely chop fresh thyme and parsley.
- salt
Crush the garlic with a little salt under the side of the knife, chopping and mashing repeatedly into a paste.
- 1 whole egg
- garlic and herb seasoning
- ½ lemon lemon zest
Combine the ground beef with the garlic paste, herbs, an egg, bread crumbs, a pinch of salt, garlic and herb seasoning and the zest of about half a lemon; mix.
- flour
Shape the meatballs, roll each in a little flour and shake off the excess; the flour adds texture and thickens the sauce.
- butter
Heat olive oil and a little butter in a skillet over medium heat; cook the meatballs gently, turning side to side, not trying to crisp them.
Cooking the meatballs gently
- 1 cloves garlic
- lemon juice
Discard most of the excess fat; add one whole clove of garlic, the chicken stock and the squeezed lemon juice; stir.
Cook about 15 minutes until the meatballs are cooked through and the sauce thickens and reduces into a gravy.
