Techniques
  • 20 g mint leaves
  • 250 g sugar
  • 300 ml lemon and lime juice
Make the flavour twice as strong, since cold dulls flavour and sweetness: blend 20 g mint, 250 g sugar and 300 ml strained lemon and lime juice on high about 30 seconds into a concentrate.
Add 700 g ice and 1/8 tsp xanthan gum and blend very well until the ice breaks down and the mixture thickens into a slushie.
  • 700 g ice
  • 0.125 tsp xanthan gum
Variation: a little concentrate topped with carbonated water makes a fizzy drink.
Variation, sorbet: pour into a Ninja Creami tub, knock out the air and freeze 24 hours; spin on the sorbet setting, or respin for a texture more like ice cream.
