Techniques
- 1½ cups red lentils
Soak the red lentils in water two to three hours; or boil three cups of water and soak them thirty minutes to soften them up.
- 3 cups water
- ½ whole red onion
Roughly chop half the red onion. Peel the garlic, roughly chop the carrots, and roughly chop the cilantro.
- 2 pieces garlic
- 2 whole carrots
- 20 g cilantro
- 1 tsp salt
- 1 tsp sweet paprika
Rinse and drain the soaked lentils and put them in a food processor with the onion, carrots, garlic, cilantro, salt, sweet paprika, smoked paprika and cayenne.
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
Blend about 30 seconds, scrape down the sides once and blend another 30 seconds, until the mixture is well incorporated, malleable and easy to shape.
Scoop about a third of a cup of mixture at a time and shape into patties, then refrigerate them a few minutes.
- oil
Variation: instead of shallow frying, spray the patties with a little oil and bake at 400 for 15 to 20 minutes.
- 1½ cups avocado oil
Heat the avocado oil in a frying pan to just under medium. After a few minutes stick in a bamboo chopstick; fast moving bubbles means it is ready.
Very carefully place in the first batch of patties and fry three to four minutes, then turn them with a second spatula and cook a couple of minutes more, until a crisp outer layer forms and holds their shape.
- ⅓ cup tahini
- 3 tbsp lemon juice
- salt
- 2 tbsp za'atar
Whisk the tahini, lemon juice, salt and za'atar together. Thin with a little water if too thick, or add more tahini if too thin.
- water
- burger buns
- ½ whole red onion
Variation: slice the burger buns in half, put them on a baking tray and warm in the oven at 350 a few minutes.
- micro greens
- pickles
Build the burger: micro greens, lentil patty, red onions, a drizzle of the tahini sauce, sliced pickles and the bun.
