Techniques
  • 1 whole onion
  • 2 whole carrots
  • 2 stalks celery
  • 1 lb lentils
  • parsley
  • chives
Wash the lentils in water, checking for anything that is not a lentil, and set them aside to drain.
Chop the celery, carrots and onion into large pieces.
  • 4 tbsp olive oil
  • 6 cloves garlic
Heat four tablespoons of olive oil in the pot over medium heat.
Smash the garlic to release the oils and the skin, then mince it.
  • 1½ tsp dried thyme
Add the celery, onions and carrots and stir occasionally over medium for four to five minutes, until the onions are translucent and softening.
  • 1½ tsp coriander
  • 1½ tsp cumin
Add the garlic with the thyme, coriander and cumin and cook about two minutes, stirring constantly so the garlic does not burn.
