Techniques
- 1 tsp garlic powder
- ¾–1 tsp salt
- ½ tsp ground cumin
- 1 whole chile chipotle and adobo sauce
- 1½ cup freshly shredded sharp cheddar cheese
- 2 lb frozen fries
- ½ cup mayonnaise
- 1 tsp ketchup
- 2 whole chipoles in adobo sauce
- ½ whole lime
- 2 tbsp sour cream
- 1 tsp garlic powder
- small paprika
- salt
For the burger sauce blend the mayonnaise, ketchup, chipotles in adobo, lime juice, sour cream, garlic powder, paprika and a little salt until smooth; taste, adjust and set aside.
- 6 strips bacon
Heat a pan over medium-high; add the chopped bacon and cook about 7 minutes until fully cooked. Remove and drain.
- 2 whole jalapenos
Cook the jalapeno rounds in the bacon grease about a minute; drain on paper towel.
- 1 lb ground beef
- 1 tsp chili powder
- ½ tsp black pepper
Discard the bacon grease. Add the ground beef, break it up and season with chili powder, garlic powder, salt, black pepper and cumin; cook about 5 minutes, scraping the bottom of the pan.

Pour off any grease; add the finely minced onion, mustard and Worcestershire sauce and cook 2 to 3 minutes. Taste for salt.
- 2 tbsp butter
- 2 tbsp all-purpose flour
For the cheese sauce melt the butter over medium heat, whisk in the flour and cook 1 minute to make a roux so the sauce is not grainy.
- salt
- black pepper
- 1 cup milk
Season with salt and pepper, add the chipotle in adobo, and slowly pour in the milk while whisking until it thickens.
Turn off the heat and add the shredded cheddar a little at a time, letting it melt between additions.
