Ingredients
Method
Techniques
  • 2 lb boneless skinless chicken thigh meat
  • ¼ cup olive oil
  • ¼ cup freshly squeezed lemon juice
  • 4 cloves garlic cloves
  • 1 tbsp dried oregano
  • 2 tsp salt
  • ¾–1 tsp cumin powder
  • freshly cracked black pepper
  • crushed red pepper flakes
Toss the chicken thighs with the olive oil, lemon juice, grated garlic, oregano, salt, cumin, black pepper and red pepper flakes until coated, then cut the meat into smaller pieces for threading.
Marinate overnight in the refrigerator, or 30 minutes on the counter.
  • 1 whole cucumber
  • salt
Peel and grate the cucumber, salt it in a strainer and squeeze out all the juices.
  • Greek yogurt
  • sour cream
  • 2–3 cloves garlic cloves
  • freshly cracked black pepper
Whisk Greek yogurt with sour cream, grated garlic and black pepper, stir in the drained cucumber and chill.
  • 5–6 whole russet potatoes
  • olive oil
  • salt
  • garlic powder
Peel the potatoes, rinse in cool water, pat dry and cut into even pieces; toss with olive oil, salt, black pepper and garlic powder.
Spread the potatoes in one even layer on a baking tray and bake on the centre rack at 425F for 35 to 40 minutes, until golden and crisp outside and tender inside, without moving them. Let them sit 10 minutes before lifting them off the pan.
  • 4 cup rice
  • 4 tbsp butter
  • vermicelli noodles
Soak and drain the rice. Heat the pot over medium heat, melt the butter and toast the vermicelli noodles until golden, a few minutes, stirring so they do not burn.
  • ¼ cup fresh lemon juice
  • 4 tsp salt
  • 4 cup chicken broth
Add the drained rice, the lemon juice, salt, black pepper and the chicken broth, bring to a boil, then reduce to low, cover and simmer 20 to 25 minutes; fluff up.
  • zucchini
  • red onions
  • bell peppers
Cut the zucchini, red onions and bell peppers the size of the chicken pieces and thread them onto skewers with two to three pieces of chicken each.
Threading and air-frying the skewers
  • olive oil
Pour the marinade left in the bowl over the skewers, drizzle with more olive oil and season with a little more salt.
Preheat the air fryer to 400F and cook the skewers about six to seven minutes per side, without overcrowding the basket, until a thermometer reads 165F.
  • parsley
Build the bowls with rice, the skewers, roasted potatoes and tzatziki on the side, a squeeze of lemon juice and chopped parsley.
