Techniques
  • 4 whole orange flesh sweet potatoes
Prick the sweet potatoes on both sides with the tip of a knife.
Bake at 400 degrees about an hour, depending on size, until just tender when tested with a thin knife; let cool until safe to handle.
  • 1 lb bacon
Put the bacon pieces in a cold pan over medium-high heat and spread them evenly so the fat renders slowly at first.
When it sizzles, stir, reduce to medium and cook, stirring occasionally, until the bacon looks foamy and most of the fat has rendered.
Drain the bacon in a strainer over a bowl, keeping the fat.
Cut open the potatoes and scoop the flesh into a bowl; break it into evenly sized chunks with a spoon or spatula without mashing smooth.
Scooping and breaking up the potatoes
  • salt
  • freshly ground black pepper
  • smoked paprika
  • 1 whole beaten egg
  • sour cream
  • freshly sliced green onions
  • extra sharp cheddar cheese
Add salt, black pepper, smoked paprika, the beaten egg, sour cream, green onions, half the bacon and two thirds of the cheddar; mix thoroughly.
Mixing in the loaded ingredients
Transfer to a two-quart baking dish and leave the top rough; scatter over the rest of the bacon and then the rest of the cheese, which insulates the bacon.
Filling the dish and topping
Bake in the center of a 400 degree oven for 30 to 35 minutes.
Top with more sliced green onions; serve with a dollop of sour cream and more green onions.
