Techniques
  • 8 oz golden sweet corn
  • 8 oz lotus root
  • 2½ tbsp Chinese cooking wine
  • 1 tbsp goki berry
  • 1 tsp salt
  • 1 lb pork short ribs
Cut the pork short ribs into individual pieces.
Cut each corn in half. Discard the tough ends of the lotus root, peel it and cut into 2/3-inch-thick pieces.
  • 1½ l water
Blanch the ribs to remove the bloody bits for a clear soup: Chinese cooking wine and 1.5 liters of water, covered, brought to a boil; take out the ribs and discard the water.
  • 4 slices ginger
  • 6 pieces red date
  • 1 tsp white peppercorn
In a clean pot, combine the blanched ribs, corn, lotus root, ginger slices, red dates, goji berries, white peppercorns, spring onion and 6 cups of water to cover.
Building the soup pot
  • 1 piece spring onion
  • 6 cup water
Cover, bring to a boil, add salt and taste.
Turn the heat to low and simmer about one and a half hours.
Remove the ginger and spring onion before serving.
