Techniques
  • 80 g 2% milk
  • 24 g sugar
  • 20 g nonfat milk powder
  • xanthan gum
  • 10 g cornstarch
  • 240 g ice
  • vanilla extract
Set the blender on a scale and add the milk, sugar, milk powder, a tiny sprinkle of gum, the cornstarch, the ice and a couple of drops of vanilla extract.
The plain vanilla base
Start the blender at speed 1 for about 30 seconds to crush the ice, aiming to break the crystals down without incorporating much air.
Increase gradually to speed 5 or 6 for another 30 seconds, tamping if needed.
After about a minute in total turn the blender off and let it relax so some air comes out; there will still be little ice chips.
Start again at speed 1 and blend another 45 to 60 seconds, increasing the speed, until it looks creamier.
Stop as soon as the texture looks right; over-blending makes it foamy. Add more ice or a little less liquid if it comes out too soft.
