Put the chopped dates in a bowl, sprinkle over the baking soda and pour on a cup of boiling water; set aside to cool.
Dates in boiling water for the mayonnaise cake
  • 2 cup all purpose flour
  • 1 tsp cocoa powder
  • ½ tsp salt
Sieve the flour and cocoa powder together and whisk in the salt.
  • ¾ cup mayonnaise
  • 1 cup sugar
Mix the mayonnaise and sugar very well with a hand mixer.
Add the dry mixture and the cooled date mixture alternately, starting with the dry; the water goes in with the dates.
Alternating dry mix and the date water
  • 1 cup broken nut meats
  • 1 tsp vanilla extract
Stir in a cup of roughly chopped pecans and a teaspoon of vanilla extract.
Grease the loaf pan and turn in the batter.
Bake at 350F for 50 minutes, until the centre springs back when lightly pressed.
Pulled at 47 minutes, which sank the middle; too late to rescue by returning it to the oven.
  • ¼ cup crushed pineapple
  • 4 tbsp butter
  • 1 whole egg yolk
  • 1 cup confectioner's sugar
  • vanilla
For the frosting, cream four tablespoons of butter, beat in an egg yolk, then a cup of confectioner's sugar two tablespoons at a time, then a quarter cup of drained crushed pineapple.
Spread the pineapple butter frosting over the top only, filling the divot.
