McGriddle-style breakfast sandwich

Press leftover pancakes into four perfect four inch rounds with a wide-rimmed glass or a cup.

Toast two of the rounds in a toaster for two minutes.

Sizzle off a smashed patty of breakfast sausage and top it with American cheese.

Put the cheesy sausage on one crisped pancake, top with a fried egg, add the second pancake, squish to break the yolk and drench in maple syrup.
