Techniques
  • 1–2 cup grape tomatoes
  • 2–3 whole pepperoncinis
  • 2 can chickpeas
Rinse the canned chickpeas really well, drain them and add to a big bowl.
  • 1 whole English cucumber
  • 5–6 whole scallions
Peel and dice the English cucumber; with regular cucumbers, halve them and scoop out the seeds.
Slice the scallions; if unwashed, put them in a big bowl of cold water, lift them out into a colander and drain well.
  • ½ cup Kalamata olives
Chop the pitted Kalamata olives.
Olives, tomatoes and peppers
  • 2 whole roasted red peppers
Halve the grape tomatoes (thirds if large); dice the roasted red peppers; slice the pepperoncinis.
  • parsley
  • fresh mint
  • feta cheese
Pick the parsley and mint leaves off the stems and chop finely; add a big chunk of feta.
Herbs and feta
  • 2 cloves garlic cloves
  • 2–3 tbsp white balsamic vinegar
  • ½ whole lemon
For the dressing, mix the grated garlic, white balsamic vinegar, juice of half a lemon, olive oil and dried oregano.
The dressing
  • ¼–⅓ cup olive oil
  • 1 tsp dried oregano
  • black pepper
Pour the dressing over the salad, mix, and season with a pinch of black pepper; no salt, as the feta is already salty.
Transfer to a serving platter.
