Techniques
- ½ stick butter
- vegetable shortening
- ¼ cup sugar
- light brown sugar
Combine the butter, shortening, sugar and light brown sugar in a large bowl.
Mixing the cake batter
- 3 whole eggs
- ½ cup buttermilk
- ⅓ cup oil
- clear vanilla extract
Add the eggs, buttermilk, oil and clear vanilla extract and mix on medium high, slowly, until homogenous; the liquid resists going into the fat.
- 2 cup cake flour
- baking powder
- salt
- sprinkles
Add the cake flour, baking powder, salt and sprinkles; mix 45 to 60 seconds until the batter comes together.
- baking spray
Spray a baking pan, line with parchment, spread the batter evenly, scatter the remaining sprinkles on top and bake 30 to 35 minutes.
- light brown sugar
- white sugar
- cake flour
- salt
- baking powder
- sprinkles
- clear vanilla extract
- oil
Crumble: mix light brown sugar, white sugar, cake flour, salt, baking powder and sprinkles; add clear vanilla extract and oil and mix until it starts sticking together. Bake 15 minutes.
- 1 stick butter
- vegetable shortening
- cream cheese
- corn syrup
- clear vanilla extract
- icing sugar
- salt
- baking powder
- citric acid
Frosting: combine butter, shortening, cream cheese, corn syrup (in place of glucose), clear vanilla extract, icing sugar, salt, a pinch of baking powder and a pinch of citric acid; mix until stark white.
Birthday cake frosting
- ¼ cup milk
- 1 tsp clear vanilla extract
Soak: whisk the milk and clear vanilla extract together.
Turn the cake out and peel off the parchment; cut two rounds with a six inch cake ring and press the scraps into the ring as the bottom layer, with a strip of acetate put in first.
Pour some soak over the bottom layer, spread a fifth of the frosting, scatter crumbs, then another fifth of the frosting.
Layering soak, frosting and crumbs
Repeat for the middle layer: soak, frosting, crumbs, frosting. Set on the top round, pour on the rest of the soak and spread the remaining frosting on top.
