Ingredients
Method
Techniques
  • pork butt
Slice pork butt very thin.
  • soy sauce
  • 1 tbsp oil
  • water
  • cornstarch
Season with a little soy sauce, about a tablespoon of oil so the slices separate, some water and cornstarch for a light velveting; marinate at least 20 minutes, longer if possible.
  • 1 whole chili
  • garlic
  • chopped palm sugar
  • fish sauce
  • lime juice
  • chopped cilantro
Pound a large chili and garlic to a paste; add chopped palm sugar to help break it down, then fish sauce, lots of lime juice and chopped cilantro.
Making the garlic lime dressing
Bring water to a boil; blanch all the pork at once in a wide sieve, spreading it with chopsticks, for about 15 seconds, then lift the sieve out so it does not overcook.
  • shredded cabbage
Dunk the pork in a bowl of warm water to rinse off extra cornstarch bits.
Rinsing off the cornstarch
  • broccoli stems
Peel the tough outside of broccoli stems and soak them in cold water until crisp.
  • mint leaves
Line the plate with shredded cabbage, add the pork, spoon the dressing over so the garlic and chilies rest on top, and top with mint leaves.
