Ingredients
Method
Techniques
  • 1 tbsp ground turmeric
  • 1 tbsp black pepper
  • 1½ tsp ground ginger
  • 1½ tsp ground cumin
  • 1 tsp cayenne pepper
  • ¾ tsp cinnamon
  • 2 tbsp salt
  • 500 g boneless chicken thighs
Combine the turmeric, black pepper, ground ginger, cumin, cayenne, cinnamon and salt; the mix comes out much finer than the others and packs a stronger punch.
Moroccan-inspired rub
  • 5 g fresh parsley
  • 5 g fresh coriander
Finely chop the parsley and coriander together.
  • 1 tbsp Moroccan spice mix
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
Mix one tablespoon of the spice mix with the minced garlic, chopped herbs, lemon juice and olive oil and coat 500 grams of chicken.
Fold each piece and thread six to seven onto each skewer, spreading them slightly.
Grill over white hot coals about 10 to 12 minutes, rotating every couple of minutes, and serve straight off the grill at peak juiciness.
