Ingredients
Method
Techniques
  • 2 can canned white beans
Drain the white beans into a colander and rinse under water.
  • 1 whole medium sized onion
  • 4 cloves large cloves of garlic
  • 4 whole tomatoes
Finely chop the onion, roughly chop the garlic, and finely grate the tomatoes to give 1 cup of tomato sauce.
  • 45 ml extra virgin olive oil
Heat a large fry pan over medium heat with the extra virgin olive oil.
Add the chopped onion and garlic and mix continuously so they do not brown too quickly, about 5 minutes, until the onions are translucent.
  • 2½ g sweet smoked Spanish paprika
  • 2 g ground cumin
  • 1 g ground ginger
  • 1½ g ground turmeric
  • ½ g crushed red pepper flakes
Add the smoked paprika, cumin, ground ginger, turmeric and red pepper flakes and mix quickly. Lightly sauteing the spices now makes them fragrant.
Blooming the spices
  • 8 g chopped parsley
  • sea salt
  • freshly cracked black pepper
  • white sugar
Add the grated tomatoes and the chopped parsley, season generously with sea salt and black pepper, and add a dash of white sugar, ground cinnamon or a little baking soda if the tomatoes are too acidic.
Turn the heat to high, mix, and simmer about 5 minutes until the grated tomatoes have slightly thickened.
  • 480 ml water
Add the drained white beans and 2 cups of water, mix gently and bring to a boil.
Lid the pan, lower to a low medium heat and simmer about 10 minutes so the flavours develop.
Remove the lid and the pan from the heat and transfer the beans to a shallow bowl.
