Techniques
  • butternut squash
Peel the butternut squash with a peeler and cut into large cubes.
  • 2 whole tomatoes
  • 2 whole onions
  • 4 cloves garlic
  • chicken thighs
Dice the tomatoes; slice the onions; mince four garlic cloves.
  • 3 cloves garlic
  • black pepper
  • ½ tsp thyme
  • salt
  • smoked paprika
  • ½ tsp chicken bouillon powder
  • lemon juice
Make a marinade of crushed garlic, black pepper, thyme, salt, smoked paprika, chicken bouillon powder and lemon juice; coat the skin-on chicken thighs.
Marinate the chicken for half an hour.
Preparing the okra
  • 10 whole okra
  • 3 cup chicken broth
Trim the tops off the okra and slice in half, keeping the seeds.
  • ½ cup red palm oil
  • ¼ cup canola oil
Heat the red palm oil and canola oil over medium-high heat; turn the heat down if it smokes.
Brown the chicken skin side, 4 to 5 minutes per side.
  • 1 tsp smoked paprika
  • 1 whole Scotch bonnet pepper
Add the garlic, smoked paprika and the pierced Scotch bonnet; saute 2 to 3 minutes.
Add the onions and cook until translucent; add the tomatoes and saute another 2 to 3 minutes.
Add the chicken stock and the butternut squash; bring to a boil, then simmer 20 minutes until the sauce thickens.
Push the okra down into the stew and cook about 5 more minutes.
