  • coriander leaves
  • 2 tsp grated ginger
  • 2 tsp grated garlic
  • ¼ tsp chili powder
  • ¼ tsp turmeric powder
Add coriander leaves (and fresh mint if using), grated ginger and garlic, curry powder, chili powder and turmeric; add a little water and blend to a thick paste.

  • 2 tbsp oil
  • 1 whole dried bay leaf
Heat the oil in a pot on medium high; add the bay leaf and cinnamon stick, stir briefly, then the onions for 3 to 4 minutes.

Add the carrots and stir 2 minutes.
Add the bite-size chicken and stir until its moisture dries up and it looks creamy.
Add the spice paste and a teaspoon of salt; fry on medium 4 to 5 minutes until fragrant.
  • 1 tsp salt
  • 700 ml chicken broth
Add the nut paste, then the chicken broth.
Bring to a boil, cover and simmer on low 25 minutes for chicken thighs, or an hour for lamb.
