Techniques
  • sushi vinegar
Wet the hand with sushi vinegar -- the same vinegar as the rice.
Wasabi and wetting the hands
  • sushi rice
Form a rice ball in the right hand and hold the slice of fish in the left.
Position the fish on the base of the fingers of the left hand, not the fingertips and not the palm.
Put the rice on the fish and turn it over, so the piece sits on the left hand.
Press the sides in, cover with two fingers, turn it around, press the sides and cover with two fingers again; repeat up and down.
Keep the piece the shape of a mountain and do not press it too hard.
  • wasabi
For the practice round: put the wasabi on the fish, then the rice, then press, turn it over in the same hand and cover.
  • tuna
Put the finished piece on the plate.
Students practise with tuna
Work facing the guest with eye contact and a smile; a sushi chef makes the food in front of the guest, so the making is part of the service.
