Ingredients
Method
Techniques
  • 15 whole Biscoff cookies
Pulse the Biscoff cookies in a food processor to fine crumbs; a few big pieces are fine.
Crushing the cookies
  • 8 oz cream cheese
  • ½ cup granulated sugar
With the whip attachment of a stand mixer or a hand mixer, mix the cream cheese, sugar and vanilla until smooth and creamy.
Making the cheesecake filling
  • 1 tsp pure vanilla extract
  • 1 cup full fat plain Greek yogurt
  • 6 whole strawberries
Add the Greek yogurt and mix on high until smooth and creamy.
Halve and thinly slice the strawberries.
Put a heaping tablespoon of crumbs in the bottom of each trifle bowl and spread level.
Divide the cheesecake filling evenly between the cups (a piping bag looks cleaner) and spread level.
Layering the trifles
Garnish one half of each top with strawberries.
Chill before serving; keeps 24 to 48 hours in the refrigerator, the crumbs softening over time.
